The short answer
What is an LLM? A large language model is software that has read a huge amount of text and learned to predict, one small piece at a time, what text should come next. ChatGPT, Gemini and Claude are products built on LLMs. That one trick, done at enormous scale, is enough to write emails and summarise contracts, and it is also why an LLM can sound completely sure while being wrong.
If you use ChatGPT every day and have never been quite sure what happens behind the box, you are in good company. Most owners we talk to in Dubai and Abu Dhabi are in the same place. You do not need maths. You need four ideas: tokens, prediction, the context window and grounding.
How an LLM works, in plain words
An LLM works by guessing the next piece of text, over and over, based on patterns it learned in training. It does not look facts up in a database. It writes the reply that seems most likely to follow what you typed, one token at a time.
Tokens: the pieces it reads and writes
A token is the small unit of text an LLM works with. Google's own course describes a token as "a word, a subword (a subset of a word), or even a single character". Everything an LLM reads and writes is counted in tokens, which is also how most providers bill for use.
Prediction: the one trick it learned
Google puts it simply: a language model "estimates the probability of a token or sequence of tokens occurring within a longer sequence of tokens". In training, the model sees a vast amount of text and keeps adjusting itself until it gets good at that guess.
Think of your phone's autocomplete after reading more than any person could in a lifetime. Companies then train it further on examples of helpful conversations, which is why ChatGPT replies like an assistant instead of finishing your sentence. OpenAI described this step in its InstructGPT paper.
The context window: its working memory
The context window is everything the model can see while writing one reply: your instructions, the conversation so far, any files you pasted and the reply itself. Anthropic's documentation calls it "a 'working memory' for the model", separate from the text it was trained on.
That is why the model "remembers" your earlier message only within one chat. Anthropic also notes that more context is not automatically better, because accuracy can drop as the window fills.
Why it can sound sure and still be wrong
An LLM can be confidently wrong because it is built to produce a likely answer, not a checked one. When it lacks the facts, it can still write something that reads like a fact. This is called a hallucination: a confident answer that is false or unsupported.
OpenAI's researchers argued in September 2025 that standard training and testing reward guessing over admitting uncertainty, like a student who guesses on a multiple choice exam because a blank scores zero. Anthropic's developer guidance says the problem can be reduced but not removed, for example by letting the model say "I don't know" and asking it to quote its sources.
If ChatGPT has ever invented a statistic for you, you did nothing wrong. The fix is to give it the facts and check what matters.
What an LLM is good and bad at for a business
An LLM for business is strongest at reading, drafting and rewording, and weakest at facts it was not given, exact numbers and decisions with real consequences. Use it where a person can check the output quickly.
| Good at | Bad at |
|---|---|
| First drafts of emails, quotes, job ads and product descriptions | Facts it was not given, such as today's prices or stock |
| Summarising long documents, meeting notes and contracts | Exact sums, unless it uses a calculator tool |
| Rewording, and drafting in Arabic and English | Legal, medical or financial advice you would act on alone |
| Pulling fields out of invoices, forms and emails | Recent events after its training, unless it can search |
| Answering customers from your own approved material | Saying "I don't know", unless you tell it that it may |
| Sorting enquiries by type or urgency | Anything that reaches a customer unchecked |
Our opinion: the most valuable uses are rarely the clever ones. They are the dull weekly hours of reading and typing someone on your team does now.
Grounding: making an LLM answer from your own data
Grounding means giving the model your real information at the moment it answers, so it works from your facts instead of its memory. The usual method is retrieval: the system first finds the relevant pages in your documents, then hands only those pages to the LLM with the question.
It is an open-book exam. A customer asks about refunds; the system finds the right paragraphs of your policy and tells the model to answer only from them.
You will hear this called RAG, short for retrieval-augmented generation. It does not make mistakes impossible, but it turns "what does the model remember" into "did we give it the right page", which you can test and fix. It is the core of most custom AI agents we build: agents that answer from your data and ask a person to approve the steps where a mistake would be costly.
Privacy questions to ask any AI vendor
Before you put customer or company data into an AI tool, ask where it goes, who can see it, how long it is kept and whether it trains anyone's models. A good vendor answers all of this in writing.
Policies differ by product, not only by company. OpenAI, for example, says that by default it does not train on data from ChatGPT Business, ChatGPT Enterprise or its API. Free consumer apps can work differently, so check the plan your team actually uses.
- Is our data used to train models, and can we switch that off in writing?
- Where is it stored and processed, and which other companies handle it?
- How long are prompts and files kept, and can we delete them?
- Whose account and API keys does the system run on, ours or yours?
- What happens to our data and setup if we stop working with you?
In the UAE, the federal personal data law, Federal Decree-Law No. 45 of 2021, took effect in January 2022 and covers cross-border transfers, and the DIFC has its own data protection law. Ask your legal adviser which applies to you. We are not lawyers.
The main LLMs you will hear about
As of October 2026, the best-known LLM families come from a few large companies, plus open models you can run yourself. We are not ranking them. Each changes often, and the right one depends on the task, language, cost and where your data must stay.
- GPT models from OpenAI, used in ChatGPT.
- Gemini from Google DeepMind.
- Claude from Anthropic.
- Llama from Meta, an openly available family developers can download.
- Jais, an Arabic and English model released in August 2023 by Inception, a G42 company, with MBZUAI and Cerebras, according to the Abu Dhabi Media Office.
If you serve customers in Arabic, test two or three models on your own real messages, Gulf dialect included.
How a small business can start this month
Start with one task where the LLM drafts and a person approves, the data is not sensitive, and you can see the time saved. Three uses fit that rule for almost any business, and none needs a developer.
- Reply drafts for common enquiries. Save your approved answers (hours, delivery areas, published prices) in a prompt and let the model draft replies your team edits and sends.
- Summaries of long documents. Contracts, tenders, meeting transcripts. Ask for a summary plus the exact quotes it relied on, then spot check them.
- Marketing first drafts in two languages. Product descriptions or posts in English and Arabic, edited by someone who writes each language well.
Run one for a month. If it saves real hours, look at automation next. Curious how an assistant feels when it is set up for a business? Try Astra, our AI assistant, by voice or text.
How LLMs connect to chatbots, AI agents and AI search
An LLM is the engine. Chatbots, AI agents and AI search answers are different vehicles built around it, and knowing which one a vendor is selling makes the pitch easier to judge.
- A chatbot puts an LLM behind a chat window or WhatsApp number, grounded in your FAQs. Our guide to a WhatsApp chatbot for business in the UAE goes deeper.
- An AI agent is an LLM that can also take actions through tools, such as reading an invoice and creating a record, within limits you set.
- AI search, such as ChatGPT search or Google's AI answers, uses LLMs to write an answer and cite pages. Becoming one of those cited pages is AEO or GEO; see our post on generative engine optimisation and our AEO and GEO service.
Our opinion, not a sourced fact: for a small business the choice of model will matter less each year. What will matter is the quality of your own data, how well the tool connects to your systems, and whether a person still checks what counts.
You already know more than you think
You now know what a token is, why the chat "forgets", why it invents things and how grounding fixes most of that. That is the picture most decisions need.

Frequently asked questions
What is an LLM in simple words?
An LLM, or large language model, is software trained on a huge amount of text to predict what comes next. That single skill lets it write, summarise, translate and answer questions. ChatGPT, Gemini and Claude are built on LLMs.
How does ChatGPT work?
ChatGPT runs on an LLM that reads your message as tokens and writes a reply one token at a time, choosing what is most likely to come next. It was trained further on helpful conversations so it behaves like an assistant. It only "remembers" what is inside the current context window.
Why does an LLM make things up?
It is built to produce a likely answer, not a checked one, so when it lacks the facts it can still write something that sounds right. Giving it your documents, letting it say "I don't know" and checking important answers reduce this a lot, though not to zero.
Is it safe to put my business data into ChatGPT?
It depends on the plan and settings. OpenAI says it does not train on data from its business plans and API by default, but consumer apps can differ. Check the exact product your team uses and keep sensitive customer data out of personal accounts.
Are there LLMs that work well in Arabic?
Yes. Several major models handle Arabic, and Jais was released in 2023 by UAE-based Inception with MBZUAI as an Arabic and English model. Quality varies by dialect and task, so test a few models on your own customer messages first.
Do I need a developer to use an LLM in my business?
Not to start. Reply drafts, summaries and marketing drafts need only a business plan of a chat tool and clear rules. You need a developer when the LLM must read your systems, answer customers on its own or take actions, which is where a custom AI agent with review steps fits.
